Hey Chuk, welcome to the best coffee shop in the world. I'm Karina the baker and founder and this is Laura your barista and manager


How did it all begin?


We started 4 years ago behind the little market stall at Maltby Street Market, its an amazing market you have to check it out. We started as a little bakery. I bake everything from home and we just bought along our little gazebo and little table, bought along 5 cakes and that's how it started. Year by year we built our menus, we built our range and we just became popular.


Vegans are more than that, we don't want to only have eat 5 cakes to choose, we want to have a chocolate cake, we want to have cheesecake, we want to have everything normal people can have. I literally ended up having the 53 different kinds of cakes. We never advertise we are vegan as the vegan food is as amazing as normal food, there is no difference, it is even better.. Also its not just vegans. we have a lot of people with dairy intolerance, so they also have reduced market. So when they come here they say wow we can eat everything, that makes them happy and it makes us happy too.



What i need to pick up on is how much work and dedication goes into making the cakes?


So I basically get 4 hours sleep, I think I am used to it. Everyday I start my mornings baking all the pastries, in the oven so they are all freshly made and baked because for me it is very important. The first bite is so important to make a good impression. , Everything is baked fresh. I start at 4am, and it takes me 2 hours because 1 have 2 ovens, then I pick Laura up, and we have to be in the shop for 6.20am and we start doing the sandwiches. We display the cakes, start the coffees. Laura is very busy as well. Every night she goes home at 7pm and all night she prepares all the fillings for the sandwiches. She marinates the carrots, she does the vegan omelettes, which take a while to make.



You have a lot of gorgeous cakes, i know it's hard but do you have a favourite you like to make?


Absolutely, the pastries, as it is something I felt was impossible for vegans to have, so we make a really nice pain au chocolate. I love the filled croissants, I make them with pistachio filling. I love the simple things like the blueberry muffins.


Everything in here is hand made with love?


Yes! I feel if I am sad my bakes are sad, so I want to be happy. I always bring good energy. We want to make this place a place away from home.
